How to read the compass
Two axes, and they are not the same thing. Extraction runs left to right: how much of the ground coffee actually dissolved. Too little and it tastes sour and salty; too much and it tastes bitter and drying. Strength runs bottom to top: how concentrated the liquid is. Too little and it is watery; too much and it is heavy.
Almost every bad piece of dial-in advice comes from mixing those two up. A shot can be strong and under-extracted at the same time. It can be weak and bitter at the same time. "Strong" is not a synonym for "over-extracted", and treating it as one is how people end up grinding in the wrong direction for a week.
The rule that makes the map usable
Extraction yield, strength and ratio are tied together by one identity: extraction equals strength multiplied by the brew ratio. Everything else follows from it.
- Grind finer and you extract more and concentrate more. Both axes rise together.
- Pull a longer yield and you extract more but dilute. One axis rises, the other falls.
So the choice of lever is not a matter of taste. If both axes are wrong in the same direction, grind is your lever. If they are wrong in opposite directions, ratio is. That single sentence is what the original compass leaves you to work out on your own, and it is why its arrows confuse people: they mix yield changes and grind changes into the same picture without saying which is which.

Sour and bitter at the same time
This is the case that breaks every flat chart, and the one people ask about most. If the shot is sour and bitter, or bitter and fast, you are not somewhere on the map at all. The water found a channel: part of the puck is over-extracted while part of it is barely touched, and the cup you taste is the average of the two.
Averaging two wrong places does not give you a right one, so no grind setting fixes it. Distribute the grounds properly, level the bed, tamp flat, and only then start reading the compass again. Astringency - that dry, rough feeling rather than a taste - usually points the same way.
When to tell the difference
Sour arrives instantly and is felt at the front of the mouth. Bitterness is felt at the back and can take up to fifteen seconds to show up. Astringency is not a taste at all: it is your mouth drying out, and it is also delayed. If you swallow and then decide, you will be right far more often than if you judge on the first sip.
Bright, juicy acidity is a quality, not a fault. Sourness is the same family taken too far - sharp enough to make you wince. Chasing every trace of acidity out of a light roast usually means over-extracting it into something flat.
Things that are commonly said and are not true
"A dry puck means a good shot"
It does not. A fully saturated puck is normal, and a bone-dry one often means you cut the shot short. Puck dryness tracks your basket, your dose and your machine's behaviour after the pump stops, not the quality of the extraction.
"Lots of crema means good coffee"
Crema tracks carbon dioxide, so it mostly tells you how recently the coffee was roasted, plus how much robusta is in the blend. Excellent espresso from a rested light roast can have very little of it.
"It should run in 25 to 30 seconds"
Time is a result, not a target. You set the dose and the yield; the time is what the grind gives you. Plenty of very good shots land well outside that window, and hitting 28 seconds with a bad-tasting shot has told you nothing.
"Change the grind first"
Only when both axes are wrong in the same direction. Ratio is the easier lever to reason about, it is fully reversible, and it does not lose you the next shot to a grinder that needs purging.
Where the numbers are softer than they look
You will see 18 to 22 percent quoted everywhere as the correct extraction range. It comes from filter-coffee research done in the 1950s, and very little since has confirmed it for espresso. The most careful modern sensory work also finds that perceived sweetness does not simply rise with extraction, and that concentration affects how a coffee is judged more than extraction does.
Grinding finer does not always extract more, either: past a point the bed chokes, flow drops, and yield falls with it. That is why "sour" has two opposite causes and why taste alone cannot always separate them - and why this tool tells you when you have run out of room instead of asking you to grind finer one more time.
Roast level shifts your target, but treat it as a rule of thumb rather than a law: one roaster's "light" is another's "medium". Lighter roasts generally take a longer ratio and more heat; darker roasts turn harsh sooner and want a shorter one.
