If you want one sentence to remember: filter is drinkable a few days off roast, espresso usually wants a week to two. The reason is mechanical. In a pour-over, escaping CO₂ produces the bloom and then mostly gets out of the way. The Other End: When Coffee Goes Stale

Freezing: the only real way to stop the clock
Freezing has moved from heresy to mainstream practice in specialty coffee, and the reasoning is simply chemistry: reaction rates fall sharply with temperature. Estimates based on standard reaction-rate models suggest coffee at a domestic freezer's -18 °C ages on the order of tens of times more slowly than at room temperature. In practice, properly frozen coffee stays close to how it tasted going in for many months.
The catch is that "properly" is doing a lot of work in that sentence. Freezing done badly - the half-used bag shoved in the freezer door and opened every morning - stales coffee faster than leaving it on the counter, because every open-and-return cycle condenses moisture onto cold beans.
One practical warning: frozen beans grind finer at the same setting, so expect to go a step or two coarser when you switch a bag from the counter to the freezer. That is a real, repeatable effect, not a placebo.
Clock Three: Grinding, Where the Time Scale Collapses
If the roast-date clock runs in weeks, the grind clock runs in minutes - and it is by far the most abused.
A whole bean is a sealed structure. Grinding shatters it, multiplying the exposed surface area by a factor in the hundreds to thousands and venting the internal gas almost instantly.
